Overnight Salad

If you're looking for a dish that not only tastes amazing but also allows you to spend more time with your guests, this Overnight Success Salad is the perfect choice! You can prepare it a day in advance, giving you the freedom to enjoy your drinks and mingle without the stress of last-minute cooking.

 

This recipe has been a staple at my BBQs and gatherings for years, thanks to a dear friend who shared it with me. The longer it sits in the refrigerator, the better it tastes—just make sure to enjoy it within a day or two. Any longer, and it might just turn into a science project for your kids!

 

**Ingredients:**

- 1 lb. regular bacon, cooked and crumbled

- 1 head of Iceberg lettuce, shredded

- 1 small head of cauliflower, broken into small florets

- 1 medium white onion, julienned or thinly sliced

- 1 cup mayonnaise (I recommend Hellman’s)

- ¼ cup sugar

- 1/3 cup Parmesan cheese

- ½ teaspoon salt

 

**Instructions:**

 

1. **Prepare the Bacon:** Line a baking sheet with aluminum foil and arrange the bacon strips on it. Place the baking sheet in a cold oven—this allows the fat to render off as the oven heats up. Set the temperature to 400 degrees and cook for about 15 minutes, adjusting the time based on your preferred level of crispiness. Once done, remove the bacon and drain it on paper towels before crumbling it.

 

2. **Layer the Salad:** In a large salad bowl, layer the ingredients starting with the shredded lettuce at the bottom, followed by the cauliflower florets, and finally the sliced onion.

 

3. **Make the Dressing:** In a large measuring cup, combine the mayonnaise, sugar, Parmesan cheese, and salt. Mix well to create a delicious dressing.

 

4. **Assemble the Salad:** Pour the dressing evenly over the layered salad. Do not mix at this stage! Instead, sprinkle the crumbled bacon on top.

 

5. **Chill and Serve:** Cover the salad bowl with plastic wrap and refrigerate overnight. This allows all the flavors to meld beautifully. When you're ready to serve, give it a good mix and enjoy!
